Mumbai

The term 'cutting' reflects Mumbai's fast-paced street culture — a tea brewed so strong and concentrated that it is served in half-portions in small, distinct cutting glasses. The ultimate daily fuel for the city's fast-moving workforce.

Irani Chai
Hyderabad & Pune

Introduced by Persian immigrants, Irani chai is legendary in Hyderabad's historic café culture. Tea leaves are boiled separately for hours to create a potent, dark decoction, then combined with rich, heavily condensed milk or milk-reduction (mawa/khoya).

Kashmiri Kahwa & Noon Chai
The Himalayan Elixirs

Kashmir features two famous teas that depart entirely from milk-and-sugar profiles found in the rest of India.

Kahwa A delicate green tea brewed with saffron, cinnamon, and cardamom, topped with crushed almonds. No milk, bright golden hue.
Noon Chai Savory pink tea with green tea leaves, milk, baking soda (creating the signature pink), and salt.

Sulaimani Chai
The Malabar Coast

Deeply rooted in the Muslim community of Kerala's Malabar region, Sulaimani chai is a beautiful, amber-colored black tea served entirely without milk. Influenced by historic Arab trade routes, it is traditionally consumed after heavy meals to aid digestion.
